英文摘要：Abstract Dunhuang Manuscript P. 3231 systematically recorded that Dunhuang Buddhists were given vegetarian diet by the government for several times in the Five Dynasties. The vegetar- ian diet included steamed cake , nuan - bing , xi - bing , Hu - bing,cai - mo - zi. botuo , gruel , jiang-shui-zhou ,geng-tuo ,dui-zi. They were the staples of Dunhuang people. No his- torical materials contains these food names,such as nuan - bing and xi - bing except the Dunhuang MS. which contais important historical data for the study of food in ancient times. Besides , it is an invaluable material for the study of the management of vegetarian diet of monks, Buddhist discipline and dietetic customs of Dunhuang people.
